Cappuccino is simple mathematics yielding complex joy: one part espresso, one part steamed milk, one part foam. The 1:1:1 ratio. But the difference between an acceptable cappuccino and one that makes you close your eyes lives in the quality of the foam.
Pull 1 strong espresso shot (about 30ml). Steam milk -- this time introducing more air than a latte, creating thick, dense, pillowy foam. Pour milk into espresso, letting the foam rise naturally into a layer about 1cm thick. Take a sip -- bold espresso cutting through soft foam. That is cappuccino.
